Gingerbread

The Gingerbread is sweetened with organic black strap molasses and applesauce.  Black strap molasses comes from the 3rd boiling of sugar cane, which removes the crystallized sugar and increases the nutritional value. Blackstrap molasses is a common folk cure and is high in iron.

  • 8  Eggs
  • ½ cup Coconut Oil, melted
  • ½ cup Unsweetnened Coconut Milk
  • ½ cup Organic Apple Sauce
  • 1/3 cup Organic Blackstrap Molasses
  • 1 tsp Vanilla
  • 1 Tbs Ginger, ground
  • 1 tsp  Cinnamon, ground
  • ½ tsp  Cloves, ground
  • ½ tsp Sea Salt
  • 1 tsp Aluminum-free Baking Powder
  • ¾ cup  Coconut flour, sifted

Blend together with a hand blender the eggs, coconut oil, blackstrap molasses, applesauce and vanilla.  Blend in separate bowl coconut flour, salt, spices, and baking powder. Gradually stir in the dry ingredients into the egg mixture.  Use a hand blender and make sure there are no lumps.  If the mixture is not sweet enough for your liking, you can add in a few drops of liquid vanilla stevia.  Grease a 5x9x3 in loaf pan and pour in the mixture. Bake at 350 degrees F for 60 minutes.  Cool and remove from pan.
