Oven Baked Veggie Latkes

  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 2 Eggs, beaten
  • 1 Zucchini, grated
  • 2 Carrots, grated
  • 2 Sweet Potatoes
  • 2 tblsp Brown Rice Breadcrumbs
  • 2 tblsp Olive oil
  • Spices
  • Sea salt

Pre-heat oven to 400 degrees.

In a food processor, chop onion, garlic, and carrots. Grate zucchini and sweet
potatoes. You can also use parsnips, turnips, red potatoes, or other root veggies. In
a mixing bowl, combine the veggie mixture with the 2 eggs, olive oil, sea salt to taste,
spices (get creative), and brown rice breadcrumbs, to be able to form patties. Place
on a grease cookie sheet. Cook for 15 minutes, flip and cook another 5 minutes.
Will freeze and store easily. Also makes a great alternative to potato latkes. These
veggie patties are also great for children as a snack or meal.
