Mini Meatloaves

  • 1lb Organic Ground Turkey or Chicken
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 3 tblsp Organic Tomato sauce
  • 1 Egg, beaten
  • 1 Zucchini, grated
  • 2 Carrots, grated
  • 1 tblsp Brown Rice Bread crumbs
  • Olive oil
  • Spices
  • Sea salt

Pre-heat oven to 350.

Saute chopped onion and garlic in olive oil. In a bowl, mix beaten egg with meat,
grated carrots and grated zucchini, add 2 tblsp tomato sauce, and the sauted onion
and garlic. Add a little sea salt and any other spices you want. Mix in brown rice
breadcrumbs. Grease muffin pan with olive oil and place mixture in muffin pan.
Brush with remaining tomato sauce. Cook for 35 minutes.
